Here is a recipe you won't regret:
Take a solid handful each of fresh basil, mint, cilantro and some green onions. Chop 'em up a little and set aside.
Now, make a dressing: one third vegetable oil, one third fish sauce, and one third lime juice.
Add a tablespoon or two of sugar, and the same for garlic paste, or Sambal Oelek or whatever. You just want a hint of spice. It occurs to me that a hint for me might be more than the average, but while you do want this spicy, you don’t need to be a macho idiot about it.
Then, boil your rice noodles according to the packet. And then using the same water, boil some shrimp. Shrimp are best enjoyed after a short boil or even a long bath in very hot water, so be wary of that. You don’t want them too tough.
Then combine the noodles, the herbs, the shrimp, and the dressing in a bowl. It will be good from minute one, but it's even better the second day.
Options: add avocado (or sub in for shrimp if you are vegetarian); scallops, minced fish.
